Au\u00dfer den Grundzutaten ist nicht mehr viel vom Originalrezept \u00fcbriggeblieben. Die Hefe von 42 g auf 0 g reduziert und daf\u00fcr einen Lievito Madre und einen Hefewasservorteig eingebaut. Wer kein Hefewasser hat, im PDF weiter unten ist eine Version mit Lievito Madre und noch einem geringen Anteil Hefe (4 g).<\/p>\n\n\n\n<p>Der Teig ist relativ weich, da die Kartoffeln \u2013 obwohl ausgedr\u00fcckt \u2013 noch viel Feuchtigkeit haben. Der TA-Wert von 163 t\u00e4uscht da etwas&nbsp;\ud83d\ude0a<\/p>\n\n\n\n<p>Einen Teil des ausgewrungenen Wassers habe ich mit Milch als Sch\u00fcttfl\u00fcssigkeit wieder zugegeben. Somit ist die im Wasser enthaltene St\u00e4rke zumindest zum Teil wieder im Teig. Insgesamt ist so die Konsistenz vom Teig besser handel- und berechenbar.<\/p>\n\n\n\n<p>Die Variante mit Hefe (im PDF) ist f\u00fcr mutige auch freigeschoben zu backen. Ich hatte mich aber von Anfang an f\u00fcr die Kastenform entschieden. Die Variante mit Hefewasser-Vorteig ist noch etwas fl\u00fcssiger. Bei mir ca. 4 Stunden bei 29 Grad in der G\u00e4rbox. Ich habe den LM abends gemacht und \u00fcber Nacht im K\u00fchlschrank geparkt. Morgens etwas akklimatisieren lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-5392-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Hefewasser und Mehl vermischen und ebenfalls warm bis zur Verdoppelung gehen lassen. Bei mir \u00fcber Nacht f\u00fcr 12 Stunden bei 29 Grad in der G\u00e4rbox.<\/span><\/div><\/li><li id=\"wprm-recipe-5392-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Kartoffeln reiben (ich habe sie in der K\u00fcchenmaschine zerkleinert) und die Masse durch ein Tuch ausdr\u00fccken. Das Kartoffelwasser dabei auffangen. 60 g des Kartoffelwassers abwiegen (vorher gut durchmischen, damit St\u00e4rke enthalten) ist und 120 g Milch dazugeben. <\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Bei mir blieben netto ca. 315 g ausgedr\u00fcckte Kartoffeln \u00fcbrig. <\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Die Zutaten &#8211; bis auf \u00d6l, Salz und Kartoffelmasse &#8211; ca. 5 Minuten auf der langsamen Stufe verkneten. Dann in den n\u00e4chsth\u00f6heren Gang schalten (Kenwood Stufe MIN und 1) und nochmal ca. 10 Minuten kneten. Zwischendurch Fenstertest machen und dann Salz, \u00d6l und zuletzt die Kartoffelmasse zugeben. Alles gut verkneten.<\/span><\/div><\/li><li id=\"wprm-recipe-5392-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Stockgare in einer leicht ge\u00f6lten G\u00e4rwanne ca. 3 Stunden bei RT bis zur deutlichen Zunahme. Dabei zu Anfang und nach 30 Minuten dehnen und falten.<\/span><\/div><\/li><li id=\"wprm-recipe-5392-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">St\u00fcckgare ca. 70-80 Minuten bei Raumtemperatur in einer gebutterten 1-Kilo-Form. Der Teig sollte fast den Rand erreichen.<\/span><\/div><\/li><li id=\"wprm-recipe-5392-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Backofen auf 240 Grad ausreichend vorheizen (am besten mit Backstahl oder Pizzastein). Mit Schwaden einschie\u00dfen und nach 10 Minuten Schwaden ablassen. Temperatur auf 200 Grad reduzieren. weitere 45 Minuten backen. Insgesamt ca. 55 Minuten. Die letzte 10 Minuten aus der Form nehmen. <\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Da der Teig ziemlich weich ist, habe ich ihn erst nach 3 Minuten im Ofen
