Aglio e Olio. Eine leckere, mediterrane Gew\u00fcrzmischung f\u00fcr Nudeln in Verbindung mit Oliven\u00f6l. Der Sauerteig sollte sich mindestens verdoppeln.<\/span><\/div><\/li><li id=\"wprm-recipe-6753-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">F\u00fcr den Biga die Hefe im Wasser aufschl\u00e4mmen und mit dem Mehl verr\u00fchren.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">\u00dcber Nacht f\u00fcr ca. 12 Stunden bei Raumtemperatur gehen lassen. Der Biga sollte Blasen zeigen.<\/span><\/div><\/li><li id=\"wprm-recipe-6753-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Alle Zutaten &#8211; au\u00dfer Gew\u00fcrz, \u00d6l und Salz &#8211;  4 Minuten auf der langsamen Stufe, dann 8 Minuten auf der n\u00e4chsth\u00f6heren Stufe (Kenwood Stufe MIN und 1) auskneten bis zu einem guten Fenstertest. Auf der schnelleren Stufe Salz, Oliven\u00f6l und Gew\u00fcrze einkneten.<\/span><\/div><\/li><li id=\"wprm-recipe-6753-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">In einer leicht ge\u00f6lten G\u00e4rwanne ca. 1 Stunde bei Raumtemperatur anspringen lassen. Dabei am Anfang und nach 30 Minuten dehnen und falten. Dann Stockgare f\u00fcr 24 Stunden im K\u00fchlschrank bei 5-6 Grad.<\/span><\/div><\/li><li id=\"wprm-recipe-6753-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">G\u00e4rwanne ca. 1 Stunde bei RT akklimatisieren lassen. Dann Teigling aufarbeiten und mit Schluss oben in ein G\u00e4rk\u00f6rbchen setzen. St\u00fcckgare abgedeckt bei Raumtemperatur ca. 60 Minuten (Fingertest).<\/span><\/div><\/li><li id=\"wprm-recipe-6753-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Ofen ausreichend vorher auf 250 Grad vorheizen (am besten mit Backstahl oder Pizzastein). Einschneiden und mit Schwaden einschie\u00dfen. Schwaden nach 10 Minuten ablassen und Temperatur auf 210 Grad reduzieren.
