Mit geschmacksbeschreibungen tue ich mich immer sehr schwer&#8230; Aber einfach lecker! Bei mir bei 29 Grad \u00fcber Nacht in der G\u00e4rbox. <\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Alternative, falls kein Hefewasser vorhanden ist: Mit den gleichen Mengen Mehl und Wasser und 0,2 g frischer Hefe einen Poolish ansetzen und \u00fcber Nacht bei Raumtemperatur gehen lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-6436-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Kartoffelschalen und Bratkartoffeln zubereiten. F\u00fcr die Kartoffelschalen ben\u00f6tigte ich 4 Kartoffeln (insgesamt 580 g). Dies ergab 115 g Kartoffelschalen.  Diese mit ein wenig Oliven\u00f6l und einer Prise Salz mischen und im D\u00f6rrautomaten oder im Backofen d\u00f6rren. Anschlie\u00dfend grob zerkleinern. Ged\u00f6rrt blieben davon 30 g \u00fcbrig. Von den gesch\u00e4lten, gekochten Kartoffeln habe ich 250 g als Bratkartoffeln zubereitet und ebenfalls grob zerdr\u00fcckt.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Ich habe diese am Vorabend vorbereitet und \u00fcber Nacht abgedeckt stehen lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-6436-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Den Teig mit Mehl, 200 g Wasser, Sauerteig und Hefewasservorteig 5 Minuten im langsamen Gang und ca. 12 Minuten im n\u00e4chst schnelleren Gang (Kenwood Stufe MIN und 1) auskneten und im letzten Drittel Salz und \u00d6l hinzugeben. Nach einem guten Fenstertest die zerdr\u00fcckten Bratkartoffeln und die ged\u00f6rrten, grob zerkleinerten Kartoffelschalen einkneten.<\/span><\/div><\/li><li id=\"wprm-recipe-6436-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Stockgare ca. 2,5 &#8211; 3 Stunden bei Raumtemperatur in einer leicht einge\u00f6lten G\u00e4rwanne. Dabei am Anfang und 2x jeweils nach 30 Minuten dehnen und falten.<\/span><\/div><\/li><li id=\"wprm-recipe-6436-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Teigling entsprechend aufbereiten und mit Schluss oben in ein G\u00e4rk\u00f6rbchen legen. Stockgare 8 Stunden im K\u00fchlschrank bei 5-6 Grad.<\/span><\/div><\/li><li id=\"wprm-recipe-6436-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Backofen ausreichend vorher auf 250 Grad vorheizen (am besten mit Backstahl oder einem Pizzastein). Teigling einschneiden und mit Schwaden einschie\u00dfen. Nach 10 Minuten Schwaden ablassen und Temperatur auf 210 Grad reduzieren.
