Dazu tr\u00e4gt bei, dass ein Teil des Roggenmehles mit kochendem Wasser \u00fcberbr\u00fcht wird. Ich habe lediglich auf den K\u00fcmmel verzichtet, weil mir K\u00fcmmel im Brot einfach nicht schmeckt. <\/p>\n\n\n\n<p>Geschmacklich bisher mein bestes Roggenbrot!<\/p>\n\n\n<div Ich habe daf\u00fcr den K-Haken genommen.<\/span><\/div><\/li><li id=\"wprm-recipe-6242-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Stockgare: 45 Minuten Kesselruhe bei Raumtemperatur. <\/span><\/div><\/li><li id=\"wprm-recipe-6242-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">St\u00fcckgare: Teig mit Spatel in die Kastenform f\u00fcllen und mit etwas Wasser glattstreichen. Etwas Roggenmehl dar\u00fcberstreuen. Ca. 1-2 Stunden St\u00fcckgare. Der Teig sollte bis zum Rand gehen und es sollten sich 5-6 mm gro\u00dfe Risse zeigen. <\/span><\/div><\/li><li id=\"wprm-recipe-6242-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Backofen (am besten mit Backstahl oder Backstein) vorheizen. Bei 220 Grad mit Schwaden einschie\u00dfen. Nach 10 Minuten Schwaden ablassen und auf 170 Grad ca. 100 Minuten fertig backen. Insgesamt also 110 Minuten.
