Getrieben durch einen Lievito Madre. F\u00fcr Geschmack und Frischhaltung ein Haferflockenkochst\u00fcck (Porridge) und ein Semola-Malzbr\u00fchst\u00fcck. <\/p>\n\n\n\n<p>F\u00fcr das Semola-Malzbr\u00fchst\u00fcck bin ich der <a href=\"https:\/\/bongu.de\/rezepte\/semola-malzbruehstueck\/\" data-type=\"link\" data-id=\"https:\/\/bongu.de\/rezepte\/semola-malzbruehstueck\/\" target=\"_blank\" rel=\"noreferrer noopener\">Empfehlung<\/a> von bon\u00b4gu gefolgt. Da das Malzst\u00fcck sehr fl\u00fcssig blieb, habe ich es zum Schlu\u00df in einem Topf aufgekocht (auch um die Enzymaktivit\u00e4t zu unterbinden). Es blieb trotzdem sehr fl\u00fcssig. Dabei das LM-ASG, das Mehl und das Wasser gut verr\u00fchren und 4-4,5 Stunden warm bis mindestens zur Verdoppelung gehen lassen. Bei mir 4,5 Stunden bei 29 Grad in der G\u00e4rbox.<\/span><\/div><\/li><li id=\"wprm-recipe-5860-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">F\u00fcr das Kochst\u00fcck die Haferflocken in 200 g Milch mit einer Prise Zucker einstreuen und unter r\u00fchren aufkochen. Die Konsistenz sollte &quot;schlotzig&quot; bis puddingartig sein. Abdecken und abk\u00fchlen lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-5860-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">F\u00fcr das Malzkochst\u00fcck das Malz im Wasser aufl\u00f6sen und das Mehl hinzugeben. Gut verr\u00fchren und bei 65 Grad 3 Stunden lang fermentieren lassen. Dabei immer wieder umr\u00fchren. Ich habe es in einem Sous Vide-Wasserbad gemacht. Gut eignet sich daf\u00fcr nat\u00fcrlich ein Thermomix oder ein kompatibles Ger\u00e4t. Jede halbe Stunde habe ich dabei umger\u00fchrt. Zuletzt hatte ich &#8211; auch um die Enzymaktivit\u00e4t zu unterbrechen &#8211; das Gemisch in einem Topf kurz aufgekocht und dann abk\u00fchlen lassen. Verwendet habe ich nur 80 g. Den Rest habe ich eingefroren f\u00fcr sp\u00e4tere Backwerke.<\/span><\/div><\/li><li id=\"wprm-recipe-5860-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">F\u00fcr den Hauptteig alle Zutaten &#8211; bis auf das Salz und das \u00d6l &#8211; mit 220 g Wasser 5 Minuten auf der langsamen Stufe, dann 8-10 Minuten auf der n\u00e4chsth\u00f6heren Stufe (Kenwood Stufe MIN und 1) auskneten bis zu einem guten Fenstertest. Auf der schnelleren Stufe Salz, \u00d6l und 40 g Wasser als Bassinage einkneten. <\/span><\/div><\/li><li id=\"wprm-recipe-5860-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Stockgare in einer leicht ge\u00f6lten G\u00e4rwanne ca. 3 Stunden bei Raumtemperatur. Am Anfang und 2x nach je 30 Minuten dehnen und falten.<\/span><\/div><\/li><li id=\"wprm-recipe-5860-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Teigling aufarbeiten und mit Schluss oben in ein G\u00e4rk\u00f6rbchen setzen. St\u00fcckgare 12 Stunden im K\u00fchlschrank bei 5-6 Grad.<\/span><\/div><\/li><li id=\"wprm-recipe-5860-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Ofen ausreichend vorher auf 250 Grad vorheizen (am besten mit Backstahl oder Pizzastein).
