Besonderheit: Der Sauerteig ist zweistufig und wird in der ersten Stufe mit Roggen-ASG und Roggenmehl angesetzt. In der zweiten Stufe wird dann Tipo 0 Violett zugegeben. Zus\u00e4tzlich ist ein Hefewasservorteig eingebaut. reifen lassen. Der Sauerteig sollte sich etwas mehr als verdoppeln.<\/span><\/div><\/li><li id=\"wprm-recipe-5842-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">F\u00fcr den Hefewasservorteig Mehl mit Hefewasser vermischen und f\u00fcr ca. 12 Stunden warm bis mindestens zur Verdoppelung gehen lassen. Ich hatte ihn bei 25 Grad zusammen mit dem Grundsauer in der G\u00e4rbox.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Ist kein Hefewasser vorhanden, kann mit den gleichen Mengen Mehl und Wasser und 0,1 g Hefe \u2013 etwas ein Reiskorn- \u00fcber Nacht bei Raumtemperatur ein Poolish angesetzt werden. Hier sollte dann die G\u00e4rzeit im Auge behalten werden.<\/span><\/div><\/li><li id=\"wprm-recipe-5842-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Alle Zutaten \u2013 bis auf das Salz \u2013 4 Minuten auf der langsamen Stufe und 10 Minuten auf der n\u00e4chsth\u00f6heren Stufe kneten (Kenwood Stufe MIN und1). W\u00e4hrend der h\u00f6heren Stufe Salz zugeben. Auskneten bis zu einem guten Fenstertest. Der Teig l\u00f6st sich komplett vom Kessel.<\/span><\/div><\/li><li id=\"wprm-recipe-5842-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Stockgare ca. 2-3 Stunden in einer leicht ge\u00f6lten G\u00e4rwanne bei Raumtemperatur bis zur deutlichen Zunahme (in etwa Verdoppelung). Ich habe den Teigling nach 2,5 Stunden geformt und zur St\u00fcckgare gestellt.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Am Anfang und 2x nach je 30 Minuten dehnen und falten.<\/span><\/div><\/li><li id=\"wprm-recipe-5842-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">St\u00fcckgare 8-12 Stunden in einem abgedeckten G\u00e4rk\u00f6rbchen mit Schluss oben im K\u00fchlschrank bei 5-6 Grad. Ich hatte den Teigling 8 Stunden in der St\u00fcckgare.<\/span><\/div><\/li><li id=\"wprm-recipe-5842-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Backofen ausreichend auf 250 Grad vorheizen (am besten mit Backstahl oder Pizzastein). Teigling einschneiden und mit Schwaden einschie\u00dfen. Nach 10 Minuten auf 210 Grad reduzieren und Schwaden ablassen.
