Gut verr\u00fchren und \u00fcber Nacht bei Raumtemperatur gehen lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-5674-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Alle Zutaten &#8211; bis auf Salz und \u00d6l  &#8211; auf der langsamen Stufe 5 Minuten verkneten. Dann 10 Minuten auf der n\u00e4chsth\u00f6heren Stufe (Stufe MIN und 1 bei Kenwood). W\u00e4hrend der schnelleren Stufe Salz und \u00d6l zugeben und kneten bis zu einem guten Fenstertest. Der Teig l\u00f6st sich komplett vom Kessel.<\/span><\/div><\/li><li id=\"wprm-recipe-5674-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Stockgare 3 Stunden bei Raumtemperatur. Am Anfang und 2x nach je 30 Minuten dehnen und falten. Der Teigling sollte sich sichtbar vergr\u00f6\u00dfern und mit G\u00e4rblasen durchzogen sein.<\/span><\/div><\/li><li id=\"wprm-recipe-5674-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Teigling nach Belieben falten und mit Schluss oben abgedeckt in ein G\u00e4rk\u00f6rbchen legen. Die St\u00fcckgare erfolgt 8-12 Stunden bei 5-6 Grad im K\u00fchlschrank. Ich hatte den Teigling 8 Stunden im K\u00fchlschrank.<\/span><\/div><\/li><li id=\"wprm-recipe-5674-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Freigeschoben: Ofen ausreichend vorher auf 250 Grad vorheizen (am besten mit Backstahl oder Pizzastein). Brot einschneiden und einschie\u00dfen mit Schwaden. Backen f\u00fcr 10 Minuten bei 250 Grad. Dann Schwaden ablassen und Temperatur auf 210 Grad reduzieren. Weitere 45 Minuten backen.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Im Gusstopf: Den Topf ausreichend mit dem Ofen auf 250 Grad vorheizen. Teigling einlegen, einschneiden und Deckel schlie\u00dfen. Dann 20 Minuten mit 250 Grad backen und Temperatur auf 210 reduziert. Weitere 20 Minuten backen.
