Getrieben durch einen Sauerteig und einen Hefewasservorteig. F\u00fcr 12 Stunden bei Raumtemperatur bis mindestens zur Verdoppelung gehen lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-5645-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Mehl und Hefewasser verr\u00fchren und warm bis mindestens zur Verdoppelung gehen lassen. Bei mir \u00fcber Nacht bei 29 Grad in der G\u00e4rbox.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Alternativ &#8211; wenn kein Hefewasser vorhanden ist &#8211; mit den gleichen Mengen Mehl und Wasser und 0,2 g frischer Hefe einen Poolish ansetzen und \u00fcber Nacht bei Raumtemperatur gehen lassen. Wie bei allen \u00c4nderungen muss man dann die G\u00e4rzeiten im Auge behalten.<\/span><\/div><\/li><li id=\"wprm-recipe-5645-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Am Morgen (oder bereits am Vorabend) die Weges zubereiten. Ca. 250 g kleine Kartoffeln waschen und (mit Schale) vierteln. Mit etwas gepresstem Knoblauch, etwas Rosmarin und etwas Oliven\u00f6l mischen und auf einem Backblech bei Umluft 200 Grad 20-30 Minuten backen. Abk\u00fchlen lassen. Netto blieben dabei160 g \u00fcbrig.<\/span><\/div><\/li><li id=\"wprm-recipe-5645-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Alle Zutaten &#8211; bis auf \u00d6l, Salz und Wedges &#8211; gut mit 350 g Wasser vermischen und 30 Minuten zur Fermentolyse stellen. Dann 3 Minuten auf der langsamen Stufe und 8 Minuten auf der n\u00e4chsth\u00f6heren Stufe (Kenwood Stufe MIN und 1) auskneten bis zu einem guten Fenstertest. Auf der schnelleren Stufe Salz, \u00d6l und nochmal 10 g Wasser als Bassinage einkneten. Zuletzt die Wedges unterkneten. Die Wedges werden dabei zum gr\u00f6\u00dften Teil vom Kneter zerdr\u00fcckt (was aber gewollt ist). Es macht nichts, wenn noch ein paar gr\u00f6bere St\u00fccke vorhanden sind.<\/span><\/div><\/li><li id=\"wprm-recipe-5645-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Stockgare in einer leicht ge\u00f6lten G\u00e4rwanne ca. 3 Stunden bei Raumtemperatur. Am Anfang und 2x nach je 30 Minuten dehnen und falten.<\/span><\/div><\/li><li id=\"wprm-recipe-5645-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Teigling aufarbeiten und mit Schluss oben in ein G\u00e4rk\u00f6rbchen setzen. St\u00fcckgare 8-12 Stunden im K\u00fchlschrank bei 5-6 Grad. <\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Ich hatte zwei Brote gemacht und ein rundes Brot 60 Minuten bei Raumtemperatur mit Schluss unten zur St\u00fcckgare gestellt (ohne Einschneiden, das Brot sollte wild aufrei\u00dfen, daf\u00fcr in den Schluss etwas Weizengrie\u00df eingearbeitet) und eines f\u00fcr 8 Stunden im K\u00fchlschrank.<\/span><\/div><\/li><li id=\"wprm-recipe-5645-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Ofen ausreichend vorher auf 250 Grad vorheizen (am besten mit Backstahl oder Pizzastein). Einschneiden und mit Schwaden einschie\u00dfen. Schwaden nach 10 Minuten ablassen und Temperatur auf 210 Grad reduzieren. Weitere 50 Minuten backen. Wenn gew\u00fcnscht, die letzten 10 Minuten Backzeit mit Cheddar-K\u00e4se belegen.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Ein Brot habe ich frei geschoben gebacken, eines wie folgt im Gusstopf:<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Gusstopf gut vorher mit dem Ofen auf 250 Grad aufheizen und den Teigling dann mit geschlossenem Deckel 20 Minuten backen. Dann die Temperatur auf 210 Grad reduzieren und weitere 20 Minuten backen.
