Im Vergleich zum ersten <a href=\"https:\/\/hermannsblog.de\/index.php\/2024\/02\/03\/biga-brot\/\" data-type=\"post\" data-id=\"4032\" target=\"_blank\" rel=\"noreferrer noopener\">Biga-Brot<\/a> habe ich den Bigaanteil auf 39% erh\u00f6ht, die Mehle leicht variiert und geschnittene, schwarze Oliven und etwas Fleur de Levain zugegeben.<\/p>\n\n\n<div id=\"recipe\"><\/div><div Im schnellen Gang \u00d6l und Salz und zuletzt die Oliven hinzugeben.<\/span><\/div><\/li><li id=\"wprm-recipe-5620-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Teig in eine leicht ge\u00f6lte G\u00e4rwanne geben. 1 Stunde bei Raumtemperatur anspringen lassen. Am Anfang und nach 30 Minuten dehnen und falten. Dann f\u00fcr 24 Stunden bei 5-6 Grad in den K\u00fchlschrank stellen.<\/span><\/div><\/li><li id=\"wprm-recipe-5620-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">1 Stunden bei RT akklimatisieren lassen. Formen und mit Schluss oben in einem abgedeckten G\u00e4rk\u00f6rbchen f\u00fcr 60 Minuten zur St\u00fcckgare stellen (Fingertest).<\/span><\/div><\/li><li id=\"wprm-recipe-5620-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Backofen ausreichend vorheizen auf 250 Grad (am besten mit Backstahl\/Pizzastein). Einschie\u00dfen mit Schwaden. Nach 10 Minuten Schwaden ablassen und Temperatur auf 210 Grad reduzieren.
