Wenn der Teig zu fest ist, ruhig noch einen kleinen Schluck Wasser dazugeben.<\/span><\/div><\/li><li id=\"wprm-recipe-5335-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Mehl mit 230 g Wasser vermischen und 1 Stunde zur Autolyse stellen. Dann die restlichen Zutaten &#8211; bis auf \u00d6l und Salz &#8211; hinzugeben und 3 Minuten auf der langsamen Stufe kneten. Dann auf die n\u00e4chsth\u00f6here Stufe schalten und weitere 12 Minuten bis zu einem guten Fenstertest kneten (Kenwood Stufe MIN und 1). W\u00e4hrend Stufe 1 das Salz und \u00d6l und schluckweise die restlichen 100 g Wasser einkneten.<\/span><\/div><\/li><li id=\"wprm-recipe-5335-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">1 Stunden anspringen lassen (bis leichte G\u00e4rblasen erscheinen) und am Anfang und 2 x nach je 30 Minuten dehnen und falten (evtl. mit Teigkarten). Dann f\u00fcr 48-72 Stunden bei 5-6 Grad in den K\u00fchlschrank geben. Ich hatte den Teig 72 Stunden in der Stockgare.<\/span><\/div><\/li><li id=\"wprm-recipe-5335-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Teig ca. 1 Stunde akklimatisieren lassen und dann auf eine gut bemehlte Arbeitsfl\u00e4che kippen (ich habe Weizengrie\u00df verwendet). Zwei Teile abstechen und am besten auf einer Dauerbackfolie vorsichtig mit zwei Teigkarten nur in Form schieben. St\u00fcckgare 40-60 Minuten.<\/span><\/div><\/li><li id=\"wprm-recipe-5335-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Backofen ausreichend vorher auf 270 Grad vorheizen (am besten mit Backstahl oder Pizzastein). Teiglinge nochmal kurz mit zwei Teigkarten in Form schieben und mit Schwaden einschie\u00dfen.
