Alles gut vermischen und ca. 12 Stunden bei Raumtemperatur g\u00e4ren lassen. Der Sauerteig sollte sich mindestens verdoppeln.<\/span><\/div><\/li><li id=\"wprm-recipe-5270-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Hefewasser und Mehl vermischen und warm bis mindestens zur Verdoppelung gehen lassen. Bei mir in der G\u00e4rbox bei 29 Grad \u00fcber Nacht f\u00fcr ca. 12 Stunden.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Wer kein Hefewasser hat, kann stattdessen einen Poolish mit der gleichen Menge Mehl und Wasser und 0,1 g (L\u00f6ffelwage oder ca. die Gr\u00f6\u00dfe eines Reiskornes) frischer Hefe ansetzen und \u00fcber Nacht f\u00fcr ca. 12 Stunden bei Raumtemperatur gehen lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-5270-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Das Wasser des Quellst\u00fcckes mit dem Roggen-ASG verschl\u00e4mmen und dann die Saaten und das Altbrot hinzugeben und vermischen. Bei Raumtemperatur f\u00fcr 15-72 Stunden stehen lassen. Ab und zu umr\u00fchren.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Ich hatten das Quellst\u00fcck ca. 18 Stunden vorher angefertigt.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Alternativ kann man nat\u00fcrlich auch den Fermentationsprozess weglassen und die Saaten dann solange quellen lassen, bis das Wasser aufgenommen ist. Oder anstelle des Quellst\u00fcckes ein Br\u00fchst\u00fcck verwenden. Oder die Saaten vorher anr\u00f6sten. Dann sollte man sie aber zur Fermentation kurz abk\u00fchlen lassen. Ich habe sie unger\u00f6stet verwendet.<\/span><\/div><\/li><li id=\"wprm-recipe-5270-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Alle Zutaten -bis auf Quellst\u00fcck und Salz &#8211; 5 Minuten auf der langsamen Stufe und dann 10 Minuten auf der n\u00e4chsth\u00f6heren Stufe (Kenwood Stufe MIN und 1) auskneten bis zu einem guten Fenstertest. Auf Stufe 1 Salz zugeben und zuletzt das Quellst\u00fcck unterkneten.<\/span><\/div><\/li><li id=\"wprm-recipe-5270-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Stockgare 2-3 Stunden Raumtemperatur. Dabei am Anfang und 2x nach je 30 Minuten dehnen und falten. Der Teig sollte sich deutlich vermehrt haben. Ich habe den Teig nach 2 Stunden Stockgare weiterverarbeitet.<\/span><\/div><\/li><li id=\"wprm-recipe-5270-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Teigling aufarbeiten und formen und mit Schluss oben in ein G\u00e4rk\u00f6rbchen legen. Abdecken und zur St\u00fcckgare 8-12 Stunden in den K\u00fchlschrank bei 5-6 Grad stellen. Ich hatte den Teigling 8 Stunden im K\u00fchlschrank.<\/span><\/div><\/li><li id=\"wprm-recipe-5270-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Backofen ausreichend vorher auf 250 Grad vorheizen (am besten mit Backstahl oder Pizzastein). Einschie\u00dfen mit Schwaden. Schwaden  nach 10 Minuten ablassen und Temperatur auf 210 Grad reduzieren.
