F\u00fcr Frischhaltung und Textur in Verbindung mit einer Yudane. Einen so soften, leckeren Zopf hatte ich noch nie. Sakadane vermischen und 6 Stunden bei Raumtemperatur (21-22 Grad) reifen lassen. Der Sakadane hatte sich bei mir verdreifacht. Ich hatte ihn am Vorabend reifen lassen und dann bei 5 Grad in den K\u00fchlschrank gestellt. Vor dem Backen etwas akklimatisieren lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-5015-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">F\u00fcr Yudane das Mehl mit kochendem Wasser \u00fcbergie\u00dfen, gut durchr\u00fchren und direkt mit Frischhaltefolie abdecken. Abk\u00fchlen und quellen lassen. Evtl. bis zum Backtag im K\u00fchlschrank aufbewahren. Dann vor dem Einsatz etwas akklimatisieren lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-5015-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Alle Zutaten au\u00dfer Salz und Butter 5 Minuten auf der langsamen Stufe verkneten. Dann auf die n\u00e4chst h\u00f6here Stufe schalten und weitere 10-12 Minuten kneten (Kenwood Stufe MIN und 1). Zuletzt auf Stufe 1 Salz und Butter zuf\u00fcgen und bis zu einem guten Fenstertest kneten.<\/span><\/div><\/li><li id=\"wprm-recipe-5015-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">2 Stunden bei RT in einer leicht ge\u00f6lten Teigwanne mit Deckel zur Stockgare stellen. Am Anfang und nach 30 Minuten dehnen und falten.<\/span><\/div><\/li><li id=\"wprm-recipe-5015-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">3 Teiglinge abstechen und rund schleifen. 10 Minuten entspannen lassen. Dann l\u00e4nglich ausrollen und zum Zopf flechten. Ca. 60 Minuten bei RT abgedeckt auf ein Backblech legen. Ich hatte das ganze Backblech in einer gro\u00dfen Plastikt\u00fcte.<\/span><\/div><\/li><li id=\"wprm-recipe-5015-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Blech mit dem Zopf bei 180 Grad in den vorgeheizten Backofen geben.
