class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">F\u00fcr den Biga zur gleichen Zeit die Hefe im Wasser aufl\u00f6sen und das ganze mit dem Mehl vermischen. Ebenfalls bei Raumtemperatur bis mindestens zur Verdoppelung gehen lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-4713-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Biga in St\u00fccke zupfen und mit dem Sauerteig kneten. Wasser immer nur schluckweise hinzugeben! 5 Minuten auf der niedrigen Stufe verkneten. Dann ca. 8 Minuten auf der n\u00e4chsth\u00f6heren Stufe (Kenwood Stufe MIN und Stufe 1). W\u00e4hrend Stufe 1 Salz hinzugeben. Kneten bis zu einem guten Fenstertest. <\/span><\/div><\/li><li id=\"wprm-recipe-4713-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Den Teig in einer leicht ge\u00f6lten, verschlossenen G\u00e4rwanne ca. 1 Stunde bei RT anspringen lassen. Dabei am Anfang und 2x nach jeweils 30 Minuten dehnen und falten. Dann 24 Stunden bei 6 Grad in den K\u00fchlschrank zur Stockgare stellen.<\/span><\/div><\/li><li id=\"wprm-recipe-4713-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Aus dem K\u00fchlschrank holen und ca. 1 Stunde akklimatisieren lassen. Dann nach Belieben schonend formen und in einem G\u00e4rk\u00f6rbchen f\u00fcr ca. 90 Minuten bei Raumtemperatur zur St\u00fcckgare stellen (Fingertest).<\/span><\/div><\/li><li id=\"wprm-recipe-4713-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Backofen ausreichend vorher auf 250 Grad vorheizen (am besten mit Backstahl oder Pizzastein). Teigling einschneiden und mit Schwaden einschie\u00dfen. Nach 10 Minuten Schwaden ablassen und Temperatur auf 210 Grad reduzieren.
