W\u00e4hrend Stufe 1 Salz und \u00d6l einkneten. Zuletzt Br\u00fchst\u00fcck unterkneten.<\/span><\/div><\/li><li id=\"wprm-recipe-4634-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Den Teig in eine ge\u00f6lte, abgedeckte G\u00e4rwanne legen und direkt und nach 30 Minuten dehnen und falten. F\u00fcr 3 Stunden bei Raumtemperatur zur Stockgare stellen. Der Teig sollte sich sichtbar vergr\u00f6\u00dfern und G\u00e4rblasen zeigen. Bei den derzeitigen hohen Temperaturen habe ich die Stockgare nach 2 Stunden beendet.<\/span><\/div><\/li><li id=\"wprm-recipe-4634-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Den Teig nach Belieben formen und mit Schluss oben in ein G\u00e4rk\u00f6rbchen legen. F\u00fcr 8-12 Stunden im K\u00fchlschrank bei 5-6 Grad zur St\u00fcckgare stellen. Ich hatte ihn 8,5 Stunden im K\u00fchlschrank.<\/span><\/div><\/li><li id=\"wprm-recipe-4634-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Den Teigling direkt aus dem K\u00fchlschrank einschneiden und mit Schwaden in den auf 250 Grad vorgeheizten Ofen geben (Ofen am besten mit Backstahl oder Pizzastein ausreichend aufheizen). Nach 10 Minuten Schwaden ablassen und Temperatur auf 210 Grad reduzieren.
