Da ich eh nochmal Burger machen wollte, habe ich mein bestehendes Rezept f\u00fcr Buns etwas umgebaut. Ergebnis: Leckere, fluffige Buns.<\/p>\n\n\n\n<p>Auch ein sch\u00f6nes, fluffiges Sandwichbrot kann man daraus machen.<\/p>\n\n\n<div id=\"recipe\"><\/div><div id=\"wprm-recipe-container-4601\" Morgens kurz akklimatisieren lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-4601-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">F\u00fcr das Mehlkochst\u00fcck das Mehl mit der Milch vermischen und unter R\u00fchren aufkochen bis eine puddingartige Konsistenz erreicht ist. Direkt mit Frischhaltefolie abdecken und abk\u00fchlen lassen. Evtl. \u00fcber Nacht in den K\u00fchlschrank stellen. Vor Verwendung kurz akklimatisieren lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-4601-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Alle Zutaten au\u00dfer Salz, Butter und Kartoffeln 5 Minuten auf der langsamen Stufe verkneten. Dann auf die n\u00e4chsth\u00f6here Stufe schalten (Kenwood Stufe MIN und 1) und weitere 10 Minuten kneten. W\u00e4hrend Stufe 1 Salz und Butter zuf\u00fcgen und bis zu einem guten Fenstertest kneten. Dann Kartoffeln unterkneten.<\/span><\/div><\/li><li id=\"wprm-recipe-4601-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Stockgare 2-3 Stunden bei RT in einer leicht ge\u00f6lten Teigwanne mit Deckel. Am Anfang und nach 30 Minuten dehnen und falten.<\/span><\/div><\/li><li id=\"wprm-recipe-4601-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Teig in 8 St\u00fccke teilen, rund formen. Ca. 60-80 Minuten abgedeckt gehen lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-4601-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Backofen vorher auf 220 Grad vorheizen. Mit Schwaden einschie\u00dfen und Temperatur auf 200 Grad runterschalten. Backen insgesamt ca. 20-25 Minuten. Stock- und St\u00fcckgare sind gleich. Die Backzeiten sind: 240 Grad f\u00fcr 10 Minuten mit Schwaden. Dann auf die n\u00e4chsth\u00f6here Stufe schalten (Kenwood Stufe MIN und 1) und weitere 10 Minuten kneten. W\u00e4hrend Stufe 1 Salz und Butter zuf\u00fcgen und bis zu einem guten Fenstertest kneten. Am Anfang und nach 30 Minuten dehnen und falten. Mit Schwaden einschie\u00dfen und nach 10 Minuten Temperatur auf 200 Grad runterschalten. Schwaden ablassen. Backen insgesamt ca. 50 Minuten. Bei mir war ungef\u00e4hr h\u00e4lftig LM (TA 150) und sonstiges ASG (TA 200). Hat man nur LM-Reste k\u00f6nnen die 30 g problemlos zugegeben werden. Hat man nur fl\u00fcssiges ASG (TA 200), sollte die Fl\u00fcssigkeit evtl. noch reduziert werden.
