Die restlichen 25% bestehen aus Manitobamehl. Getrieben durch einen Sauerteig mit Roggenvollkorn und einem Hefewasservorteig mit Weizenvollkorn. Bei mir f\u00fcr 12 Stunden bei 29 Grad in der G\u00e4rbox.<\/span><\/div><\/li><li id=\"wprm-recipe-4454-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Sonnenblumenkerne mit einer Prise Salz anr\u00f6sten und mit dem kochenden Wasser \u00fcbergie\u00dfen. Ziehen und abk\u00fchlen lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-4454-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Alle Zutaten &#8211; bis auf Br\u00fchst\u00fcck, Salz und \u00d6l &#8211; mit 250 g Buttermilch vermischen und 30 Minuten zur Fermentolyse stellen. Dann 4 Minuten auf der langsamen Stufe und 10 Minuten auf der n\u00e4chsth\u00f6heren Stufe (Kenwood Stufe MIN und 1) auskneten. Auf Stufe 1 Salz und \u00d6l und noch 50 g Wasser schluckweise als Bassinage zugeben. Auskneten bis zu einem guten Fenstertest. Dann kurz das Br\u00fchst\u00fcck unterkneten. Der Teig sollte sich komplett vom Kessel l\u00f6sen.<\/span><\/div><\/li><li id=\"wprm-recipe-4454-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">In einer leicht ge\u00f6lten G\u00e4rwanne bei Raumtemperatur ca. 3 Stunden zur Stockgare stellen. Der Teigling sollte sich sichtbar vergr\u00f6\u00dfern und leichte G\u00e4rblasen zeigen. Dabei am Anfang und nach 30 Minuten dehnen und falten.<\/span><\/div><\/li><li id=\"wprm-recipe-4454-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Nach Belieben aufarbeiten und in einem G\u00e4rk\u00f6rbchen mit Schluss nach oben f\u00fcr 8-12 Stunden in den K\u00fchlschrank bei 5-6 Grad zur St\u00fcckgare stellen. Ich hatte das Brot 8 Stunden im K\u00fchlschrank.<\/span><\/div><\/li><li id=\"wprm-recipe-4454-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Ofen ausreichend vorher auf 250 Grad aufheizen (am besten mit Backstahl oder Pizzastein). Teigling aus dem K\u00fchlschrank nehmen, einschneiden und mit Schwaden einschie\u00dfen. Nach 10 Minuten Schwaden ablassen und Temperatur auf 210 Grad senken. Insgesamt f\u00fcr 55 Minuten backen.<\/span><\/div><\/li><\/ul><\/div><\/div>\n<div id=\"recipe-video\"><\/div>\n<div id=\"recipe-4454-notes\" class=\"wprm-recipe-notes-container wprm-block-text-normal\"><h3 class=\"wprm-recipe-header wprm-recipe-notes-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none\" style=\"\">Notizen<\/h3><div class=\"wprm-recipe-notes\"><span style=\"display: block;\">Wer kein Hefewasser hat, kann einen Poolish mit 0,1-0,2 g frischer Hefe (ca. ein Reiskorn) ansetzen und \u00fcber Nacht bis mindestens zur Verdoppelung bei Raumtemperatur gehen lassen.<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\">Wer alternative Mehle verwendet, sollte auf jeden Fall die Fl\u00fcssigkeitsmenge reduzieren.
