Diese haben wir in mehreren Belgien-Urlauben immer gerne gegessen \ud83d\ude42 Nachdem meine Tochter ein Brot aus dem Urlaub mitgebracht hatte, wurde mein Ehrgeiz, ein Rezept dazu zu erstellen, wieder entfacht.<\/p>\n\n\n\n<p>Da es sich um ein Hefebrot handelt habe ich f\u00fcr die erste Version nochmal das Salz-Hefe-Verfahren angewandt. Obwohl ich nicht glaube, das im Original Vollkorn enthalten ist, habe ich hier einen Teil Vollkornmehl verarbeitet. Diesmal gekauft und nicht selbst gemahlen. <\/p>\n\n\n\n<p>Eine zweite Version habe ich (vom Poolish mal abgesehen) nur mit Lievito Madre getrieben.<\/p>\n\n\n<div id=\"recipe\"><\/div><div Bis zum Hauptteig evtl. im K\u00fchlschrank parken und vor Verwendung etwas akklimatisieren lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-4188-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">F\u00fcr das Mehlkochst\u00fcck das Mehl mit der Milch vermischen und unter R\u00fchren aufkochen bis eine puddingartige Konsistenz erreicht ist. Direkt mit Frischhaltefolie abdecken und abk\u00fchlen lassen. Evtl. \u00fcber Nacht in den K\u00fchlschrank stellen. Vor Verwendung kurz akklimatisieren lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-4188-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Salz und Hefe in dem Wasser aufl\u00f6sen und die Mischung mindestens 4, h\u00f6chstens 48 Stunden im K\u00fchlschrank bei 5 Grad ruhen lassen. Vor Einsatz akklimatisieren lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-4188-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Alle Zutaten bis auf die Butter mischen und 5 Minuten im langsamen Gang und ca. 8 Minuten im n\u00e4chsth\u00f6heren Gang kneten (Kenwood Stufe MIN und 1). Im schnellen Gang die Butter einkneten. Kneten bis zu einem guten Fenstertest.<\/span><\/div><\/li><li id=\"wprm-recipe-4188-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Stockgare ca. 2,5-3 Stunden bei Raumtemperatur in einer leicht einge\u00f6lten G\u00e4rwanne bis zur Verdoppelung bzw. deutlichen Zunahme. Dabei am Anfang und 1x nach 30 Min. dehnen und falten.<\/span><\/div><\/li><li id=\"wprm-recipe-4188-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">St\u00fcckgare ca. 80 Minuten bei Raumtemperatur (warme Fensterbank) in der 1-Kilo-Kastenform. Das Brot sollten den Rand knapp \u00fcberragen.<\/span><\/div><\/li><li id=\"wprm-recipe-4188-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Backofen ausreichend vorher auf 220 Grad vorheizen (am besten mit Backstahl oder Pizzastein). Mit Schwaden Kastenform in den Ofen stellen, nach 10 Minuten Schwaden ablassen und Temperatur auf 200 Grad reduzieren. Insgesamt 45 Minuten backen. Im schnellen Gang die Butter einkneten. Mit Schwaden Kastenform in den Ofen stellen, nach 10 Minuten Schwaden ablassen und Temperatur auf 200 Grad reduzieren. Insgesamt 45 Minuten backen.
