Mehl mit 27 g Wasser, 0,7 g Salz und  0,4 g frischer Hefe vermischen, 1-2 Stunden bei RT anspringen lassen und dann bei 4-8 Grad f\u00fcr mindestens 12-48 Stunden in den K\u00fchlschrank stellen.<\/span><\/div><\/li><li id=\"wprm-recipe-4129-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Sauerteig ansetzen und f\u00fcr ca. 12 Stunden bei Raumtemperatur gehen lassen. Er sollte sich mindestens verdoppelt haben.<\/span><\/div><\/li><li id=\"wprm-recipe-4129-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Saaten mit einer Prise Salz anr\u00f6sten und mit dem kochenden Wasser \u00fcbergie\u00dfen. Ziehen und abk\u00fchlen lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-4129-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Alle Zutaten \u2013 bis auf Salz, \u00d6l und Br\u00fchst\u00fcck \u2013 auf der langsamen Stufe ca. 4 Minuten verkneten. Auf die n\u00e4chsth\u00f6here Stufe schalten und weiter 10 Minuten kneten (Stufe MIN und 1 bei Kenwood). Salz und \u00d6l in der schnellen Stufe hinzugeben und auskneten bis zu einem guten Fenstertest. Dann Br\u00fchst\u00fcck unterkneten.<\/span><\/div><\/li><li id=\"wprm-recipe-4129-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Ca. 2,5-3 Stunden Stockgare in einer leicht ge\u00f6lten, abgedeckten G\u00e4rwanne bei Raumtemperatur. Am Anfang und nach 30 Minuten dehnen und falten. Der Teig sollte sich sichtbar vergr\u00f6\u00dfert haben und leichte G\u00e4rblasen zeigen. Ich hatte die doppelte Menge angesetzt und der Teigling war nach 2,5 Stunden soweit.<\/span><\/div><\/li><li id=\"wprm-recipe-4129-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Nach Belieben formen und mit Schluss oben in einem G\u00e4rk\u00f6rbchen ca. 60 Minuten zur St\u00fcckgare stelle (Fingertest). Alternativ f\u00fcr ca. 8-12 Stunden bei 5 Grad im K\u00fchlschrank. Der Teigling sollte knappe Gare haben. Ich hatte ihn 9 Stunden im K\u00fchlschrank.<\/span><\/div><\/li><li id=\"wprm-recipe-4129-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Backofen vorher gut auf 250 Grad aufheizen (am besten mit Backstahl oder Pizzastein). Teigling einschneiden und mit Schwaden einschie\u00dfen. Nach 10 Minuten Schwaden ablassen und Temperatur auf 210 Grad reduzieren. Weitere 40 Minuten backen.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Zusatz f\u00fcr Ninja Woodfire Outdoor: Ofen auf Stufe Backen auf 240 Grad vorheizen und 10 Minuten backen. Dann Temperatur auf 190 Grad reduzieren und weitere 35 Minuten backen.
