Mit 54% selbst gemahlenem Roggenvollkorn und 46% Weizenvollkorn. Zur Abrundung ein Saatenbr\u00fchst\u00fcck und ein Malzbr\u00fchst\u00fcck. Eine Besonderheit: Ich habe den Sauerteig geteilt in einen Roggen- und einen Weizensauerteig. Auch er sollte sich mindestens verdoppelt haben.<\/span><\/div><\/li><li id=\"wprm-recipe-3953-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">F\u00fcr das Malzbr\u00fchst\u00fcck Mehl mit Wasser und 3 g aktivem Malz vermischen und f\u00fcr 3-4 Stunden bei 65 Grad verr\u00fchren. Dann Temperatur kurz auf 80-85 Grad erh\u00f6hen. Abk\u00fchlen lassen. Ich hatte etwas mehr angesetzt und in einem Plastikbeh\u00e4lter in ein Sous-Vide-Bad gegeben (unbezahlte Werbung: Klarstein Tastemaker Sous Vide FoodLocker). Da ein permanentes R\u00fchren utopisch ist, habe ich mehrmals in den 3,5 Stunden umger\u00fchrt. Zuletzt habe ich dann f\u00fcr 30 Minuten die Temperatur auf 85 Grad erh\u00f6ht. Das ganze kann man nat\u00fcrlich sehr gut im Thermomix oder kompatiblen Ger\u00e4ten machen.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Netto bleiben ca. 100 g \u00fcbrig.<\/span><\/div><\/li><li id=\"wprm-recipe-3953-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Saaten mit einer Prise Salz anr\u00f6sten und mit dem kochenden Wasser \u00fcbergie\u00dfen. Quellen und abk\u00fchlen lassen (am besten auch \u00fcber Nacht).<\/span><\/div><\/li><li id=\"wprm-recipe-3953-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Alle Zutaten bis auf das Br\u00fchst\u00fcck in den Kessel geben und 5 Minuten auf der langsamsten Stufe (Kenwood Stufe MIN) und 10-15 Minuten auf der n\u00e4chsth\u00f6heren Stufe (Stufe 1) auskneten. Teigling einschneiden oder stippen und mit Schwaden einschie\u00dfen. Nach 10 Minuten Schwaden ablassen und auf 210 Grad ca. 50 Minuten fertig backen. Insgesamt also 60 Minuten.
