Ich hatte ihn f\u00fcr 4 1\/2 Stunden in der G\u00e4rbox bei 29 Grad. Alternativ f\u00fcr ca. 12 Stunden bei Raumtemperatur mit 18 g ASG.<\/span><\/div><\/li><li id=\"wprm-recipe-2982-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">F\u00fcr das Mehlkochst\u00fcck das Weizen-Vollkornmehl mit Ayran (oder Buttermilch) verr\u00fchren und aufkochen bis sich eine puddingartige Konsistenz einstellt. Direkt mit Frischhaltefolie abdecken und abk\u00fchlen lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-2982-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">F\u00fcr das Br\u00fchst\u00fcck die Sonnenblumenkerne mit einer Prise Salz anr\u00f6sten und mit dem kochenden Wasser \u00fcbergie\u00dfen. Quellen und abk\u00fchlen lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-2982-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Alle sonstigen Zutaten - bis auf \u00d6l, Salz und Br\u00fchst\u00fcck - vermischen und 5 Minuten mit Stufe MIN (Kenwood) verkneten. Anschlie\u00dfend ca. 10 Minuten auf Stufe1 bis zu einem guten Fenstertest. Dabei Salz und \u00d6l zugeben und zuletzt das Br\u00fchst\u00fcck einkneten.<\/span><\/div><\/li><li id=\"wprm-recipe-2982-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Stockgare ca. 3 Stunden bis zur deutlichen Zunahme. Dabei zu Anfang und nach 30 Min. dehnen und falten. Bei mir war der Teigling nach 2 1\/2 Stunden bei warmer Raumtemperatur von 26 Grad soweit.<\/span><\/div><\/li><li id=\"wprm-recipe-2982-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Teigling nach Belieben formen und im G\u00e4rk\u00f6rbchen abgedeckt f\u00fcr 12 Stunden bei 6 Grad in den K\u00fchlschrank stellen. Alternativ ca. 60 Minuten bei Raumtemperatur (Fingerprobe).<\/span><\/div><\/li><li id=\"wprm-recipe-2982-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Backofen gut vorheizen auf 250 Grad (am besten mit Backstahl oder Backstein). Teigling einschneiden und mit Schwaden einschie\u00dfen. Nach 10 Minuten auf 210 Grad schalten und f\u00fcr weitere 45 Minuten backen.
