Zusammen mit den noch vorhandenen Haferk\u00f6rnern habe ich ein Brot darum gebastelt.<br \/>\nEin leckeres Brot mit Biss u.a. durch ein Br\u00fchst\u00fcck mit ger\u00f6steten Haferk\u00f6rnern. Getrieben durch einen Weizensauerteig. bis mindestens zur Verdoppelung gehen lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-2918-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Das ger\u00f6stete Hafer-Vollkornmehl mit der Buttermilch zusammenr\u00fchren und unter st\u00e4ndigem R\u00fchren aufkochen bis eine puddingartige Konsistenz erreicht ist. Mit Frischhaltefolie abdecken und abk\u00fchlen lassen. Am besten \u00fcber Nacht im K\u00fchlschrank.<\/span><\/div><\/li><li id=\"wprm-recipe-2918-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">100 g Haferk\u00f6rner mit einer Prise Salz leicht anr\u00f6sten und mit kochendem Wasser \u00fcbergie\u00dfen. Abk\u00fchlen und quellen lassen. Die K\u00f6rner haben dann noch &quot;Biss&quot;. Alternativ mit der doppelten Menge Wasser ca. 30 Minuten k\u00f6cheln lassen bis sie weich sind und das Wasser dann abgie\u00dfen bzw. auffangen, abk\u00fchlen lassen und im Hauptteig verwenden.<\/span><\/div><\/li><li id=\"wprm-recipe-2918-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Alle Zutaten - bis auf Salz, \u00d6l und Br\u00fchst\u00fcck - mit 200 g Wasser zusammenr\u00fchren und 30 Minuten zur Fermentolyse stehen lassen. Dann bis zu einem guten Fenstertest auskneten. 3 Minuten auf Stufe MIN und 6 Minuten auf Stufe 1 (Kenwood). W\u00e4hrend des Knetens nochmal 10 g Wasser als Bassinage zugeben. Im letzten Drittel Salz, \u00d6l und Br\u00fchst\u00fcck unterkneten.<\/span><\/div><\/li><li id=\"wprm-recipe-2918-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Stockgare 3 Stunden bei Raumtemperatur bis zur deutlichen Zunahme. Am Anfang und 1x nach 30 Minuten dehnen und falten. Es sollten G\u00e4rblasen erkennbar sein.<\/span><\/div><\/li><li id=\"wprm-recipe-2918-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">St\u00fcckgare 8-12 Stunden im K\u00fchlschrank bei 5 Grad.
