Vittoriamehl mitbestellt. Es ist ein helles, feines Weizenmehl, Tipo00, W460. Proteinwert: &gt;17%. Das Getreide kommt aus der neuen Welt (USA\/Kanada?) und wird in Italien gemahlen&#8230; Die Umweltbilanz dazu wollen wir mal au\u00dfer Acht lassen&#8230;<\/p>\n<p>Gepaart mit etwas Emilia (Tipo 2-Weizenmehl ) wollte ich daraus ein Brot versuchen. Triebmittel Lievito Madre mit etwas Hefewasservorteig. Der fertige Teigling war anschlie\u00dfend etwas &#8222;schwammig&#8220;. Aus Angst, dass er breitlaufen konnte, habe ich ihn nach der St\u00fcckgare \u00fcber 14 Stunden im K\u00fchlschrank noch 30 Minuten &#8211; w\u00e4hrend der Ofen aufheizte &#8211; in die K\u00fchltruhe gestellt. Trotzdem sah der Teigling &#8211; nachdem er auf der Backfolie war &#8211; etwas breit aus. Aber&#8230; das Brot entwickelte noch einen wunderbaren Ofentrieb und war dann ganz so, wie ich es wollte \ud83d\ude42 Sehr, sehr lecker!<\/p>\n<p>F\u00fcr die ganz aufmerksamen Leser: Eigentlich ist noch etwas 550er Weizenmehl im Teig, da ich meinen LM mit diesem Mehl f\u00fchre. D. h. beim Ansatz des f\u00fcr das Brot bestimmten LM ist im Grund-LM nat\u00fcrlich etwas 550er Mehl enthalten. Aber ich erw\u00e4hne es nur der Vollst\u00e4ndigkeit halber, nicht dass es etwas ausmachen w\u00fcrde \ud83d\ude09<\/p>\n<div id=\"recipe\"><\/div><div id=\"wprm-recipe-container-2369\" Ich hatte ihn 4 Stunden bei 29 Grad in der G\u00e4rbox. Meistens wiege ich auch nicht so grammgenau ab sondern setze im Verh\u00e4ltnis 80\/80\/40 an. Ein wenig bleibt ja meistens im G\u00e4rbeh\u00e4lter, sodass es meistens dann ziemlich genau hinkommt \ud83d\ude42<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Hefewasservorteig<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-2369-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Warm bis zur Verdoppelung gehen lassen. Bei mir ca. 10-12 Stunden bei 29 Grad in der G\u00e4rbox. Anschlie\u00dfend bis zum Backen im K\u00fchlschrank parken und vor der Verwendung 60 Minuten akklimatisieren lassen.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Kneten<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-2369-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Alle Zutaten - bis auf Salz und \u00d6l - auf Stufe MIN 5 Minuten verkneten, dann auf Stufe 1 schalten (Kenwood) und Salz und \u00d6l zugeben. Ca. 12 Minuten weiterkneten bis zu einem guten Fenstertest.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Stockgare<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-2369-step-3-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Teig in einer leicht ge\u00f6lten G\u00e4rwanne abgedeckt 3 Stunden bei Raumtemperatur bis zu einer deutlichen Zunahme gehen lassen. Es sollten sich G\u00e4rblasen zeigen.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">St\u00fcckgare<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-2369-step-4-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Den Teigling wie gew\u00fcnscht aufarbeiten und in ein bemehltes G\u00e4rk\u00f6rbchen geben. F\u00fcr 12-14 Stunden bei 5 Grad in den K\u00fchlschrank stellen. Ich hatte ihn 14 Stunden im K\u00fchlschrank und habe ihn dann w\u00e4hrend der Ofen aufheizte noch 30 Minuten in den Gefrierschrank gestellt.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Backen<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-2369-step-5-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Ofen (am besten mit Backstahl oder Backstein) 30-40 Minuten auf 250 Grad vorheizen. Teigling direkt aus dem K\u00fchlschrank bzw. der K\u00fchltruhe auf einen Einschieber geben und wie gew\u00fcnscht einschneiden. Ich verwende dabei immer ein Backpapier oder eine Dauerbackfolie. Bei 250 Grad mit Schwaden in den  Ofen geben. Nach 10 Minuten Schwaden ablassen und auf 210 Grad runterschalten.
