Und schon den Geruch von Chai-Tee finde ich g\u00f6ttlich. Also was liegt n\u00e4her, als diesen auch in ein Brot zu packen \ud83d\ude42<\/p>\n<p>Ein leckeres Weizen-Mischbrot mit Saaten, Rogensauerteig und einem Hefewasservorteig.<\/p>\n<div Ich hatte ihn ca. 12 Stunden bei 29 Grad in der G\u00e4rbox. Bis zum Ansetzen des Hauptteiges evtl. im K\u00fchlschrank parken und kurz vorher etwas akklimatisieren lassen. <\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Br\u00fchst\u00fcck<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-2340-step-3-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Die Saaten mit einer Prise Salz leicht anr\u00f6sten und mit dem hei\u00dfen Chai-Latte \u00fcbergie\u00dfen. Abk\u00fchlen und quellen lassen. <\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Kneten<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-2340-step-4-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Alle Zutaten des Hauptteiges \u2013 au\u00dfer dem Salz und dem Br\u00fchst\u00fcck - in den Kessel geben. In der langsamen Stufe 5 Minuten, in der n\u00e4chst h\u00f6heren Stufe 10 Minuten kneten (Kenwood Stufe MIN und anschlie\u00dfend Stufe 1). Zuletzt Salz unterkneten. Der Teig sollte einen guten Fenstertest ergeben. Wenn er so gut wie ausgeknetet ist, das Br\u00fchst\u00fcck kurz unterkneten.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Stockgare<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-2340-step-5-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Den Teigling in eine ge\u00f6lte Teigwanne abgedeckt f\u00fcr ca. 3 Stunden bis zur deutlichen Zunahme in der Stockgare gehen lassen. Dabei am Anfang und 2x nach je 30 Minuten dehnen und falten (S\/F).<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">St\u00fcckgare<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-2340-step-6-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Teigling wie gew\u00fcnscht formen und in einem bemehlten  G\u00e4rk\u00f6rbchen f\u00fcr 12 Stunden zur St\u00fcckgare in den K\u00fchlschrank bei 5 Grad stellen.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Backen<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-2340-step-7-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Den Ofen mindestens 40 Minuten vorher auf 250 Grad vorheizen. Am besten mit Backstahl oder Backstein. Teigling aus dem K\u00fchlschrank nehmen, einschneiden und einschie\u00dfen mit Schwaden. Den Schwaden nach 10 Minuten ablassen und die Temperatur auf 210 Grad reduzieren. F\u00fcr weitere 45 Minuten backen.
