Nun bekommt man ein Schwarzbrot wie fr\u00fcher vom Handwerksb\u00e4cker im normalen Haushaltsofen nicht so gut hin&#8230; Aber ann\u00e4hernd und gut schmeckend schon. Dieses besteht aus 73 % Roggen-Vollkorn\/Schrot und 27 % Dinkelvollkorn\/Schrot. Die Mehle habe ich selbst gemahlen, wobei der Roggenschrot zur H\u00e4lfte fein (Mockmill Stufe 1), zur anderen H\u00e4lfte mittelgrob (Mockmill Stufe 5) gemahlen wurden. Der Dinkelschrot wurde fein gemahlen. Anstelle von sonst bei Heimb\u00e4ckern gerne verwendeten Apfel- oder R\u00fcbenkraut habe ich dunkles Backmalz inaktiv genommen. Nat\u00fcrlich kann man auch das Kraut verwenden.<\/p>\n<p>Ein leckeres, vollwertiges Brot f\u00fcr eine 1-Kilo-Kastenform.<\/p>\n<div id=\"recipe\"><\/div><div id=\"wprm-recipe-container-2358\" Der Teig sollte bis zum Rand gehen oder leicht dar\u00fcber hinaus.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Backen<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-2358-step-5-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Backofen (am besten mit Backstahl oder Backstein) auf 220 Grad vorheizen. Mit Schwaden einschie\u00dfen. Nach 10 Minuten Schwaden ablassen und auf 170 Grad ca. 90 Minuten fertig backen. Insgesamt also 100 Minuten.
