Mein Ziel war ein zuckerarmer Universalteig, der sowohl f\u00fcr Streuseltaler, einen Zopf oder auch f\u00fcr Croissant verwendbar ist. Die Pflaumen-Streusel-Taler waren jedenfalls lecker \ud83d\ude42 Croissants und Zopf sind auch gelungen \ud83d\ude09<\/p>\n\n\n\n<p>Es lassen sich auch leckere Br\u00f6tchen daraus Da immer etwas im Beh\u00e4lter h\u00e4ngen bleibt, bin ich beim ansetzen nicht so genau und nehme meistens 80\/80\/40 \ud83d\ude09<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Ich hatte ich f\u00fcr 4 Stunden bei 29 Grad in der G\u00e4rbox. Anschlie\u00dfend habe ich ihn bis zum Backen am n\u00e4chsten Tag im K\u00fchlschrank geparkt und kurz vorher bei Zimmertemperatur 1 Stunden akklimatisiert. Nat\u00fcrlich kann er auch direkt verwendet werden.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Mehlkochst\u00fcck<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-2143-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Mehl und Milch zusammenr\u00fchren und unter R\u00fchren aufkochen bis eine puddingartige Konsistenz erreicht ist. Abk\u00fchlen lassen. Am besten mit Frischhaltefolie direkt auf dem Kochst\u00fcck abdecken. Kann man auch gut am Vorabend machen und in den K\u00fchlschrank stellen.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Kneten<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-2143-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Alle Zutaten &#8211; au\u00dfer Salz und Butter &#8211; auf Stufe MIN 5 Minuten kneten. Dann auf Stufe 1 hochschalten und ca. 10 Minuten kneten (Kenwood). Dabei Salz und Butter zuf\u00fcgen. Kneten bis zu einem guten Fenstertest. <\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Hinweis: Soll der Teig f\u00fcr Croissants verwendet werden, reicht eine k\u00fcrzere Knetphase aus. Die Backzeit ist die gleiche. Da jeder Ofen nat\u00fcrlich anders ist, ist eine Sichtkontrolle angebracht. Einfach backen, bis der gew\u00fcnschte Br\u00e4unungsgrad erreicht ist \ud83d\ude09<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Nach dem Backen kann man noch etwas Butterplatte auf die untere H\u00e4lfte legen (\u00fcberstehenden Teig dabei auf die Butterplatte umschlagen) und die obere H\u00e4lfte dar\u00fcber legen. Fest andr\u00fccken.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Eine einfach Tour, dann eine doppelte Tour geben. Wenn der Teig noch k\u00fchl genug und willig ist, nochmal eine einfache Tour geben. Ein Mehl, welches speziell f\u00fcr reiche Teige wie Brioche oder eben Croissants geeignet ist und sich durch einen tollen Geschmack, tolle, leicht gelbliche F\u00e4rbung des Geb\u00e4cks und hohe Dehnbarkeit auszeichnet.<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\">Notiz II: Der fertig tourierte Teig l\u00e4sst sich auch prima einfrieren. Da ich Donnerstags Zeit hatte, habe ich den Teig komplett fertig gemacht, touriert und dann vor dem finalen Ausrollen in einer Plastikt\u00fcte (eingepackt in Backpapier) in den Gefrierschrank gelegt. Freitagabends habe ich das Paket zum Auftauen in den K\u00fchlschrank gelegt und am Samstagabend ausgerollt und die Teiglinge geschnitten und geformt. Diese wiederum auf einem Backblech in eine gro\u00dfe Plastikt\u00fcte gelegt und zur St\u00fcckgare \u00fcber Nacht in den K\u00fchlschrank bei 6 Grad gelegt. Morgens dann etwas akklimatisieren lassen, noch die Eistreiche drauf und in den Backofen. Das w\u00fcrde ich jetzt nicht f\u00fcr Wochen im Gefrierschrank lassen, aber wenn man vor dem geplanten Backtag nicht die n\u00f6tige Zeit hat, kann man so gut ein paar Tage \u00fcberbr\u00fccken.<\/span><div class=\"wprm-spacer\"><\/div>\n<span style=\"display: block;\">Notiz III: Ich habe auch teilweise Teiglinge (z.B. Plunderecken &#8211; immer zwei Dreiecke \u00fcbereinander) etwas anspringen lassen und dann direkt nach dem Formen eingefroren. Bei Bedarf dann \u00fcber Nacht im K\u00fchlschrank auftauen lassen und morgens bei 190 Grad Umluft ca. 15 Minuten direkt in den Backofen geben. Butterplatte auf die untere H\u00e4lfte legen, \u00fcberstehenden Teig auf die Butterplatte umschlagen und die obere H\u00e4lfte dar\u00fcber legen. Fest andr\u00fccken. Dreimal eine einfache Tour machen. Wenn der Teig zwischendurch unwillig ist, kurz f\u00fcr 30-60 Minuten in den K\u00fchlschrank legen.
