Und es wurde nochmal Zeit f\u00fcr ein Brot im Backrahmen.<\/p>\n\n\n\n<p>Es sollte ein relativ hoher Vollkornanteil sein. Deshalb die H\u00e4lfte des Mehls Vollkorn (Weizen- und Dinkelvollkorn, selbst gemahlen in der Mockmill auf Stufe 1), der Rest 550er Weizenmehl und etwas Semola. Zur Unterst\u00fctzung der ASG-Reste ein Vorteig, angesetzt mit Hefewasser.<\/p>\n\n\n\n<p>Bei einer weiteren Variante habe ich anstelle des Hefewassers etwas frische Hefe verwendet. Diese Version ist als PDF abrufbar.<\/p>\n\n\n\n<p>Beide Varianten k\u00f6nnen nat\u00fcrlich auch freigeschoben gebacken werden. Dazu einfach den Teig in zwei Teiglinge aufteilen und die Backzeiten anpassen. Auch als &#8222;normales&#8220; Kastenbrot zu backen. Backzeit dabei 55-60 Minuten. ansetzen und ca. 12 Stunden warm (am bestem in der G\u00e4rbox bei 29-30 Grad) gehen lassen. Er sollte sich mindestens verdoppeln.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Ich habe ihn am Vortag gemacht und bis zum Backtag im K\u00fchlschrank geparkt. Hefewasservorteige kann man gut ca. 3 Tage im K\u00fchlschrank aufbewahren.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Wer kein Hefewasser hat, sollte aus dem Mehl, 330 g Wasser und etwa 0,1 g frischer Hefe (etwa ein Reiskorn) einen Poolish \u00fcber Nacht ansetzen. Dem Hauptteig dann 7 g frische Hefe zugeben. G\u00e4rzeiten k\u00f6nnen dann abweichen!<\/span><\/div><\/li><li id=\"wprm-recipe-6123-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Saaten mit einer Prise Salz anr\u00f6sten und mit dem kochenden Wasser \u00fcbergie\u00dfen. Abk\u00fchlen und quellen lassen.<\/span><\/div><\/li><li id=\"wprm-recipe-6123-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Alle Zutaten &#8211; bis auf Salz, Br\u00fchst\u00fcck und \u00d6l in den Kessel geben und auf der langsamen Stufe 5 Minuten, dann 5 Minuten auf der n\u00e4chsth\u00f6heren Stufe kneten bis zu einem guten Fenstertest (Kenwood Stufe MIN und 1). W\u00e4hrend der schnelleren Stufe \u00d6l, Salz und Br\u00fchst\u00fcck unterkneten. Der Teig l\u00f6st sich komplett vom Kessel.<\/span><div class=\"wprm-spacer\"><\/div><span style=\"display: block;\">Salzmenge durch ASG-Reste erh\u00f6ht.
